Recipe for Greek Style Preserved Lemons

Lemon trees are common throughout Greece. Those that aren’t used fresh are preserved in recipes such as this. These lemons are best with organic lemons.

Greek Style Preserved Lemons Recipe Ingredients:

  • 5 large lemons
  • 5 tablespoons salt
  • Greek olive oil
  • 1/2 teaspoon dried Greek oregano for each jar

Directions on How to Make Greek Style Preserved Lemons:

Wash the lemons and blot them dry with a paper towel.

Slice the lemons pieces about 1/8-inch thick. Lay them flat on a cutting board and sprinkle the pieces with the salt.

Arrange the pieces inside several sterilized glass jars. Fill the jars with olive oil and sprinkle with the oregano.

Cover and seal the jars. If you don’t seal them they will keep in the refrigerator for 1-2 weeks.
