Fava MeatballsGreek Style Fava Croquettes (Fava Keftedes) Recipe Ingredients:

  • 2 cups yellow split pea soup
  • 1 medium tomato, chopped
  • 1 1/2 tablespoons chopped shallot
  • 1 tablespoon fresh, chopped chives
  • 3 tablespoons fresh, chopped parsley
  • 1 teaspoon dried oregano
  • 1 large egg, lightly scrambled
  • 1/2 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Olive oil, for frying

How to Make Greek Fava Croquettes:

Add all the ingredients except the olive oil to a large bowl and blend thoroughly with a wooden spoon. Don’t worry if the mixture is dry – as long as it holds its shape, it’s perfect. Add a little water if it’s too dry or a little more flour if it’s too wet.

Form into patties using 1/4 cup of the mixture for each of them. Pour oil into a skillet so that it covers 1/4 of an inch. Set the burner to medium and heat the oil for a few minutes. Add several of the croquettes to the pan. Your goal is to put as many in the pan as you can without causing them to overlap. Fry each croquette for about 4-6 minutes on each side before flipping. Cook the other side for 4 – 6 minutes. Repeat with the next batch until there are no more croquettes to cook.

Place the croquettes on paper towels as you remove them from the oil. Let stand for a minute or two before eating. Serve with tzatziki or skordalia.
