Almond trees grow very well in Greece, especially on islands such as Crete. This roasted almond is a staple when the almonds are ready to be picked. Versions of this dish can be found throughout Greece.

Greek Style Roasted Almonds Recipe Ingredients:

  • 3 cups whole, blanched almonds
  • 1 cup fresh lemon juice
  • 2 tablespoons Greek olive oil
  • 2 tablespoons coarse salt, such as Greek sea salt

How to Prepare Greek Style Roasted Almonds:

Place the almonds into a large dish and pour in the lemon juice. Make sure all the almonds are covered by the lemon juice. If not, add a little more lemon juice. Let the mixture soak for 30 minutes.

Preheat the oven to 350 degrees Fahrenheit. Brush a baking sheet with some of the olive oil.

Remove the almonds with a slotted spoon. Place them on a single layer on the baking sheet. Place the sheet in the center of the oven and bake for 15 minutes.

Pour the almonds in a serving bowl. Toss with the remaining oil and sprinkle with the salt.
