Recipe for Greek Style Green Bean Salad

Although the beloved horiatiki is by far the most popular salad in Greece, other types of salads are often served. This one is a popular favorite when green beans are in season.

Salata me Fasolakia Recipe Ingredients:

  • 2 pound fresh string beans (yellow, green, haricot verts, etc), ends trimmed
  • 3 tablespoons lemon juice
  • Salt, to taste
  • 2 cups crumbled feta cheese
  • 1/3 cup Greek olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Greek oregano
  • Pepper, to taste
  • 1 small red onion, chopped
  • 1/3 cup chopped, fresh parsley

How to Make Greek Green Bean Salad:

Fill a large pot with water and bring the water to a boil. Add the beans and bring the water to a boil again. Cook for 2-3 minutes. Immediately drain the beans in a colander and transfer to a large bowl filled with ice and water. After the beans soak for about five minutes, drain them.

Transfer the beans to the serving bowl. Drizzle with lemon juice and sprinkle with salt and then toss to coat. Toss in the feta cheese, olive oil, garlic, oregano, pepper, and chopped onion. Toss with fresh parsley just before serving.
