This recipe is one of the easiest you could make in Greek cuisine. You don’t need a lot of ingredients and it comes together quickly. It tastes best when the vegetables are fresh from the garden.

The beauty of this recipe is how versatile it is. You can use vegetables that you have on hand, as long s they can stand up to braising. You’ll want to prep the vegetables for braising before you can use them. For example, you should trim the ends of the green beans, cut the zucchini, summer squash, or eggplant into smaller pieces (about 1 – 1 1/2 inch pieces), trim the okra, peel and cut the potatoes. The prep will depend on the vegetable.

Quick Braised Greek Vegetables Recipe Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 pounds vegetables, prepped for braising (Like green beans, zucchini, summer squash, eggplant, okra, etc).
  • 1 cup tomato sauce or 1 1/2 cups canned, artichokes, potatoes, diced tomatoes with their juices
  • Water – enough to cover vegetables halfway.
  • 1-2 teaspoons dried oregano

How to Make Quick Braised Greek Vegetables:

Drizzle the bottom of a large saucepan with the olive oil.

Set the heat to medium and add the onions. Cook the onions, stirring occasionally, until they are translucent. This should take about 5-10 minutes.

Add the vegetables and sauce for 2-3 minutes. Stir in the tomato sauce or diced tomatoes. Add water, enough to cover the vegetables about halfway from the top. Stir in the oregano.

Place a lid over the pan and bring the mixture to a boil over medium-high heat. Drop down to a simmer and cook for about 30 minutes, or until the vegetables are tender.

Grilled sandwiches, or “Tost” are a staple food in Greece. This is unexpected because this particular food isn’t associated with Greek cuisine. Yet, they are a mainstay of Greek street food and are present on restaurant, cafe, and taverna menus all over Greece. Think of them as a classic grilled cheese sandwich, but with a Greek twist. You can easily make them at home.

Easy Greek Grilled Sandwiches (Tost) Recipe Ingredients:

  • 2 Slices of Bread for each sandwich
  • Cheese of choice – Greek when possible – I like a combination of Feta and Kasseri or Mozzarella – you can just eyeball the cheese choice
  • Sliced meat, if desired (like ham, sliced loukaniko, turkey, salami, etc)
  • Other ingredients, if desired – Experiment with things like chopped bell peppers, chopped tomatoes, sliced olives, etc
  • Olive oil and/or butter for the bread

How to Make Greek Grilled Sandwiches (Tost):

Toast the bread slices before you assemble the sandwiches. You’ll want to toast it to medium, since you will also be running the sandwiches through the broiler.

After toasting, brush the slices of bread with olive oil.

Preheat the broiler. Spray the broiler with nonstick cooking spray or brush with olive oil.

Place each toasted slice of bread on a broiler pan (two per sandwich). Place ingredients of choice on each of the slices of bread (you can do this any way you want). It is best to make sure each slice of bread has some cheese on it, though, since the cheese melts.

Broil the sandwiches until the cheese melts and the ingredients are heated through. This should take about 5 minutes. Assemble the sandwich halves right after they come out of the oven and serve.

Fun Greek Grilled Sandwich (Tost) Combinations to Try:

  • Feta, mozarella (or Kasseri) cheese, tomato slices, oregano
  • Bacon, lettuce, tomato and cheese of choice
  • Sliced grilled chicken (Greek style!), feta, tomato, oregano
  • Fresh mozzarella slices, sliced tomato, fresh basil
  • Sliced gyro meat, tzatziki, diced tomato, diced onion
  • Sliced loukanko, tzatziki, feta, diced tomato
  • Brie or mozzarella cheese, feta, Greek fresh herbs (parsley, chives, oregano, basil)

Cook the pasta according to the package instructions.

When cooked, drain in a colander and place in a serving bowl.

  • 2 tablespoons Greek olive oil
  • 4 cloves garlic, coarsely chopped
  • 3 tomatoes, coarsely chopped
  • 1 cup white wine
  • 2 teaspoons dried oregano
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons fresh parsley

How to Prepare Greek Style Steamed Mussels:

First, prepare the mussels. It’s much easier if you buy them already cleaned, but even if you manage that, you’ll still need to rinse them under cold water. You should also make sure they are de-bearded. If they aren’t, you’ll want to do this, as well.

Drizzle the olive oil into a large pot (one that you would use to make soup). Set the heat to medium and add the garlic. Cook for about one minute and then add the tomatoes. Easy Greek Style Bean Salad Recipe Ingredients:

  • 1 recipe ladolemono (oil and lemon) dressing
  • 3 cans (usually around 15 ounces) beans of choice, such as chick peas, navy beans, butter beans, kidney beans, black eyed peas, etc *
  • 1 large onion, chopped
  • 1 cup of chopped vegetables of choice, such as tomatoes, cucumbers, and bell peppers
  • 1/3 cup fresh, chopped herbs of choice, such as parsley, chives, oregano, basil, and more
  • Feta cheese, optional
  • Greek olives, optional

How to Make Easy Greek Style Bean Salad:

Prepare the ladolemono according to the recipe instructions and set aside.

Add the beans to a mixing bowl. Add the onions and vegetables and toss gently until the ingredients are incorporated.

Pour the ladolemono over the mixture and toss to evenly distribute the dressing. Sprinkle the freshly chopped herbs over the top. At this point you can also sprinkle in the feta cheese and Greek olives if you decide to use them.

You can serve this right away or let refrigerate it for a few hours before serving.

*As a side note, you can always prep the beans on your own. However, this is time consuming. You would need to soak the beans overnight, and then place the in a large pot, bring the water to a boil, and then let them simmer for an hour. How to Make Greek Roasted Vegetables with Oil and Lemon:

Preheat oven to 425 Degrees Fahrenheit. Spray a baking dish with nonstick cooking spray or brush with olive oil.

Place the vegetables you will be using in a bowl.

10 Minute Greek Style French Toast Ingredients:

  • 2 eggs, beaten
  • 1/3 cup milk
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 4 slices Greek bread, about 1/2-inch thick
  • Olive oil, to coat the pan
  • Greek honey, for drizzling
  • Crushed walnuts, for sprinkling
  • Cinnamon, for sprinkling

How to Prepare 10 Minute Greek Style French Toast:

Whisk together the eggs, milk, sugar, and cinnamon. Arrange the bread in a small baking dish in a single layer and pour the bread mixture over. Let the mixture soak into the bread for a few minutes, making sure that all sides of the bread are coated.

Drizzle about 1-2 tablespoons of olive oil in a frying pan. Set the heat to medium and let the oil heat. Arrange the bread in a single layer. You may need to make more than one batch. Shrimp is one of those seafoods that tastes great with Greek flavors. They also cook fast! These kabobs make for an easy appetizer or main course.

Fast Greek Style Shrimp Kabobs Recipe Ingredients:

  • 1 pound large shrimp, deveined but still with their peels

How to Make Greek Style Shrimp Kabobs:

Heat the grill to 350 Degrees Fahrenheit or prepare the coals.

Prepare the ladolemono according to the recipe instructions.

Add the shrimp into a large ziplock bag. Pour the marinade over the shrimp. Seal the bag and place the shrimp in the regenerator to marinate. This will take about an hour.

Remove the shrimp from the marinade and place on skewers. You should be able to fit about 3-4 shrimp on each skewer.

Place the shrimp skewers on the grill. Cook on one side for 5 minutes before flipping the shrimp over and cooking for another 5 minutes. You’ll know the shrimp are fully cooked when they turn pink.

Lettuce salad, also known as Maroulosalata, is a staple in every Greek household. While it may not be as popular as the Greek village salad, or Horiatiki, it is such a simple favorite that it is worth learning how to make it. The nice part about this is that you can make it in just five minutes! You can use any type of lettuce that you have on hand.

5 Minute Easy Greek Lettuce Salad Recipe Ingredients (Maroulosalata):

  • 8-10 cups lettuce of choice, torn or shredded
  • 1/2 cup chopped, fresh herbs of choice (such as parsley, dill, scallions, chives)
  • 1 recipe oil and vinegar dressing
  • Crumbled feta cheese, to garnish (optional)

How to Make 5 Minute Easy Greek Lettuce Salad Recipe:

Toss the lettuce into a bowl. Add the herbs and toss gently.

Prepare the oil and vinegar dressing according to the recipe instructions.

Toss about half of the recipe into the salad. Reserve the rest to serve with the salad.

Sprinkle the salad with feta cheese just before serving, if desired.

Parfaits are usually made with several layers, and the fun of it is that you can make it different each time. You can basically do anything that you want, but in general you’ll want to include a combination of different types of dessert layers. The following recipe can be changed depending on the types of ingredients that you want to lose

15 Minute Greek Style Dessert Parfaits Ingredients:

  • First layer (baked dessert)- 1 recipe Greek style dessert of choice, such as baklava or koulourakia
  • Second layer (creamy layer) – pudding, flavored Greek yogurt, or ice cream works for this layer – you will need 1 – 2 cups for this layer
  • Third layer (something to sprinkle) – can use candy sprinkles, chocolate chips, nuts, chopped fruit, or chopped baked goods (like crumbled koulourakia)
  • Whipped cream for a garnish (optional)

How to Make 15 Minute Greek Style Dessert Parfaits:

These parfaits are meant to be composed quickly, and you can use anything that you have on hand. In general, you will want three layers. If your dessert glasses are deep, you can repeat each layer more than once.

Select your first layer. You’ll likely want to roughly chop this layer so that it fits easily in the dessert glass. Line the glass with this layer.

Add your second layer. Plan on using about 2 tablespoons worth of whatever you choose for this layer.

Add your third layer. Plan to use about 1 tablespoon worth of whatever you choose for this layer.

At this point, you can decide to repeat the layers again, or you can leave it as is and garnish it with some whipped cream.

These roasted potatoes are as easy to make as they are delicious. They also include traditional Greek flavors, which makes them a treat for any dinner table!

Greek Style Roasted Potatoes Recipe Ingredients:

  • 1 recipe oil and lemon dressing (ladolemono)
  • 1 pound roasting potatoes (like New Potatoes, Yukon Gold, Red Bliss, etc), washed and cut into 1/2 inch pieces

How to Prepare Greek Style Roasted Potatoes

Preheat the oven at 375 Degrees Fahrenheit. Spray a baking sheet with nonstick cooking spray.

Prepare the oil and lemon dressing according to the recipe instructions.

Place the potato pieces in a mixing bowl. Pour the dressing over the potatoes and toss with a wooden spoon until the pieces are coated.

Pour the potatoes into the baking sheet, making sure they are arranged in a single layer. Place the baking sheet in the center of the oven.

Bake until the potatoes are soft and crispy. This should take 45 minutes to 1 hour, depending on how crispy you like them.

This quick and easy recipe doesn’t take long at all to prepare. It is also rich in flavor thanks to the oil and lemon dressing, as well as the lemon slices. This recipe works with any future of fish.

Greek Style Grilled Fish Recipe Ingredients:

  • 4 fish filets (any type of fish will work)
  • 1 recipe oil and lemon dressing (ladolemono)
  • 1 lemon, sliced
  • 2 tablespoons chopped parsley, to garnish

How to Prepare Greek Style Grilled Fish:

Preheat oven to 350 Degrees Fahrenheit. Spray a 9 x 13 baking dish with nonstick cooking spray.

Arrange the fish filets in a single layer on the baking dish.

Prepare the ladolemono (oil and lemon dressing) according to the recipe instructions.

Pour half the recipe of ladolemono over the fish. Place the rest in a dish on the table so that people can use it on their fish after it comes out of the oven, if desired. Arrange lemon slices over the fish.

Place the fish in the center of the oven. Bake until cooked all the way through. This should take about 30 minutes.

Garnish with chopped parsley as soon as it comes out of the oven. Serve right away.

Do you love the flavor of Greek style chicken but don’t want to spend a lot of time making it? This easy recipe can be ready in just thirty minutes! For speed, this recipe eliminates marinating the chicken, but if you have the time, feel free to marinate the chicken in a gallon size ziplock bag using the oil and lemon dressing for an hour or two before you make the meal.

Greek Grilled Chicken Recipe Ingredients:

  • 8 boneless chicken breast halves
  • 1 recipe oil and lemon dressing (ladolemono)
  • Fresh chopped herbs, like oregano, chives, or thyme, to garnish

How to Make Greek Grilled Chicken:

Preheat the grill to 350 Degrees Fahrenheit if using a propane grill, or prepare the coals if using a charcoal grill.

Blog the chicken breast halves with paper towels until the surface is somewhat dry.

Prepare the oil and lemon dressing according to the instructions. Brush each piece on both sides with the dressings. Brush the tops with more dressing.

Place each breast half on the grill. Flip after 8 minutes. Brush the tops with more of the dressing. Discard the leftover. Cook for another 8 minutes.

It’s no secret that Greeks love to stuff ingredients inside of grape leaves. Most of the time, the filling includes a combination of rice, meat, and seasonings, or a vegetarian version that omits the meat. However, those aren’t the only Greek ingredients that taste great inside the grape leaves! You can also stuff them with cheese. You can use any type of cheese, but it really is best if the cheese is meltable. Our version uses a combination of mozzarella, which is meltable and easy to find, and feta.

Simple Cheese Stuffed Grape Leaves Recipe Ingredients:

  • 3/4 cup shredded mozzarella cheese
  • 1/3 cup crumbled feta cheese
  • 1/4 cup Greek olive oil
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Pepper, to taste
  • 40 medium-sized grape leaves
  • Lemon slices (optional)

How to Prepare Simple Cheese Stuffed Grape Leaves:

Place the mozzarella cheese, feta cheese, olive oil, oregano, salt, and pepper in a medium bowl. Stir with a wooden spoon until well combined.

Lay a grape leaf on a flat surface vein side up. Please a portion of the mixture in the center of the leaf (you will use about a teaspoon for each leaf).

Fold the sides in and then roll each grape leaf into a tight, cigar shape. Place each roll face down in a deep pan in a single layer (you may need to use more than one pan). Fill the pan with water so that each of the grape leaves are covered. Sprinkle the top with more salt (to taste) and then top with lemon slices.

Bring the mixture to a boil and simmer for twenty minutes. Add more water if it evaporates throughout the cooking process. Remove the grape leaves from the pan with a slotted spoon and serve with more lemon slices.
