This simple meze is best prepared when bell peppers are in season. It can also be served as a side dish.
Greek Style Pepper Salad Appetizer (Piperies Oreteiko) Recipe Ingredients:
- 6 medium red bell peppers
- 1 medium onion, chopped
- Salt, to taste
- Pepper, to taste
- 3 tablespoons red wine vinegar
- 1/4 cup Greek olive oil
- 1 teaspoon dried Greek oregano
- 1 tablespoon chopped, fresh parsley to garnish.
How to Make Greek Style Pepper Salad Appetizer:
Preheat the oven to 450 degrees Fahrenheit.
Place the peppers on a baking dish and bake for twenty minutes. Peppers should wilt and become soft. Pell the skin off and remove the seeds. Cut the pepper into small pieces and add them to a medium bowl. Add the onion, salt, pepper, vinegar, olive oil, and oregano and stir gently with a wooden spoon. Pour into a serving dish and sprinkle with parsley.
